Festive Fruit Cake (Decorating Kit) Alternative Recipe

You will need:

  • 500g Mixed Fruit Pack
  • 1/2 Cup Brandy

Replace Step 1 - Hydrate The Fruit & Cool with 

  • Combine the 500g Mixed Fruit pack and Brandy in a bowl (Do not add the water as per the standard recipe) Cover with cling wrap and leave overnight to soak.

Follow Step 2.  As an alternative, you can bake as a cake, in an 8" Tin, which has been doubled lined with baking paper.   Oven temperatures stay the same. 

Follow Step 3.   Either pour the batter into the individual Panettone moulds or all in to the 8" Tin.

Follow Step 4.   If baking as an 8" cake, bake instead for approximately 70-75 minutes or until a skewer inserted into the centre comes out clean.  Cool completely before decorating.

If making in advance, wrap the undecorated baked cakes in cling wrap, and store in an airtight container for up to 2 weeks.
