Vanilla Cupcake Recipe

Everyday can be a celebration with our Party Cupcake kits. For that small gathering or midweek celebration with family, our Party Cupcake kits come with everything you need to celebrate in style.

We knew that the majority of parties are held on a weekend, with lots of family and friends. But its often not the actual date of say your birthday. So what about the mid week party, the one you often have with just immediate family on the actual day of your birthday, engagement or great news! We designed them with this idea in mind...

What you will need:

For the Cupcake:

  • Roberts Edible Craft - Party Cupcake Kit Vanilla or 320g of our Vanilla Mud Cake Mix
  • 2 Large Eggs (600g Packet)
  • 1/4 Cup Vegetable Oil
  • 1/2 Cup Water
  • Sprinkles are included in the Party Cupcake Kit Vanilla, otherwise purchase your favourite blend from our range of 120g Sprinkle Blends

For the Icing

  • 100g Unsalted Butter, softened (but not melted)
  • 1 Tablespoon Milk

Equipment

  • One standard 12 hole cupcake pan.

Step 1.

Get Ready and pre-heat the oven to 160 degrees Celsius, fan forced setting. Place the 12 included mauve cupcake cases into the pan. 

Step 2.

Place the dry cake mix, eggs, oil and water into a medium sized bowl. Using a large spoon or spatula, mix until smooth.

Step 3

Divide the batter evenly between your cupcake papers.  (using a medium sized ice cream scoop to measure helps achieve even sized cupcakes) 
Bake for 18 minutes or until a skewer inserted into the centre of a cupcake comes out clean. Remove cupcakes from the oven, and cool in the tins for 10 minutes, before turning onto a cooling rack to cool completely.

Step 4

Place the dry icing mix, softened butter and milk into a deep mixing bowl. Using an electric mixer, mix on the lowest speed until combined. Scrape down the sides and base of the bowl. Mix on high speed for 3 minutes until icing is light and fluffy.

Step 5 - Lets Decorate!

Spoon icing into a piping bag 

We used an closed star piping nozzle which you can find in our NS03 2D 6 Point Closed Star Piping Nozzle Set.

Starting in the centre of the cupcake, piping in a circular motion moving towards the outside with each rotation. This will create a small rosette onto each cupcake.  

Decorate with the include sprinkles.  

If you don't have a piping nozzle, instead spread the icing onto each cupcake with a butter knife
