Chocolate Truffles

A chocolate truffle is traditionally made with a chocolate ganache centre coated in chocolate or cocoa powder and formed into a curved shape.
It is believed that the first chocolate truffle was created in France in 1895 by M Dufour.
Basic Application:
Step 1. Place 225g of Roberts Confectionery Dark Melting Buttons in a bowl.
Step 2. Pour 175ml double cream into a saucepan and bring to the boil, then immediately pour over the chocolate buttons and mix until the chocolate has melted and is smooth. This is called a ganache.
Step 3. Cover and put aside at room temperature for 1½ hours to cool completely and until set.
Step 4. Using a teaspoon, scoop out a small amount of mixture and roll into a bite
sized ball. Roll in either sifted cocoa, crushed pistachios, chopped hazelnuts or even sprinkles for the kids.
Step 5. Place in a foil truffle cup and serve (or eat them before your guests arrive!)
